Together with Mr and Mrs Khoo, we went to Esplanade to catch the fireworks. I decided to use the 50mm lens (1.4) to catch the fireworks as it will give me shorter exposure . Unfortunately, we were just right in front of the launching pad and was able to capture part of the burst.

Tong and Tan. The Tong Tan were up in Genting in March 2008. Thanks to MS, the immigration at Second Link was a breeze. Never seen the immigration empty before. The last time I was in Genting Highland was 20 years ago. It was with Sze Cheng, Emily, Laurence and Chun Fong. This time round, with my neighbour.

Great weather and a pig out time with two dinner buffets in a row. The food was great and the price too. Weather was burrrrrrrrrrrr cold for us. Walking in the clouds, warm coffee and friends.

Check out the Country Tid Bits and Candy Cottage. Recommended by Chiew Song, the place is located at the base of the cable car station. Free testing - beware the salt and sugar though.

Escalators are not only useful for transporting people. They are great romancing machines. There is a mechanism that turns couples into embrace mode. Don't take my words for it, the next time you step on one, look out for the couple ahead of you.

Recommend it to your friends, colleagues and parents. On top of baby bonus, I think the government should install them in all HDB blocks to help increase ..............

One early morning, beep... sms - "do you want National Day Combined Rehearsal tickets this Saturday?". Off goes my fingers "yes". Thanks to AJ Knight. We got three tickets for the Yellow sector - almost at the centre of the new Marina Bay Floating Platform. They said it is the largest in the world. Another first for Singapore.

AJ Knight, what is it like doing the Apache salute from the air?.

It is going to be a great show. Too bad, it was a Combined Rehearsal with stand ins for the people like Timsum Dollies, Asaha ................... the comperes were reading off their scripts ...... the orchestras were absent. For those who got the National Day and National Day Preview tickets. Bless you. It is going to be a great show. The EXCO did a great job.

We went to the Land of The Rising Sun - Tokyo and Osaka for a week on an ANA tour package. The food was a letdown. We loved Japanese food and were expecting a certain class. But it was a disappointment. In fact, the ramen stores we seek at every opportunity was so much better.

The only good food we got out of the tour package was a tonkatsu restaurant and the morning breakfast buffet in one hotel.

If you are above 16 years old, give Tokyo Disneyland a pass. They are sooooo kidish. Or maybe we got bombarded by the latest animation - Shrek!, Spiderman, Back Draft, Jurassic Park.

Universal Studios Japan(USJ) is GREAT. They had a Sesame Street parade and we ended up following them, probably the only family of four with a total age of 135 years!

USJ was FUN. Make sure you watch the Sesame Street parade. Party with Elmo, Cookie Monster, Big Bird, Bert and Ernie as they sing and dance. "Cookie san kawaii desu ne!"

Spit your hear out with Spiderman ride - the Statue of Liberty vanishes! Race through the city as you try to keep up with the world's favorite web slinger in this no-holds-barred battle against the forces of evil. You'll zip around battle-worn streets as Spidey swings overhead and goes up against Doctor Octopus and an army of twisted villains. The Land Mines of Cambodia

Three decades of war in Cambodia have left scars in many forms throughout the country. Unfortunately, one of the most lasting legacies of the conflicts continues to claim new victims daily. Land mines, laid by the Khmer Rouge, the Heng Samrin and Hun Sen regimes, the Vietnamese, the KPNLF, and the Sihanoukists litter the countryside. In most cases, even the soldiers who planted the mines did not record where they were placed. Now, Cambodia has the one of the highest rates of physical disability of any country in the world. While census data for Cambodia is sketchy, it is generally accepted that more than 40,000 Cambodians have suffered amputations as a result of mine injuries since 1979. That represents an average of nearly forty victims a week for a period of twenty years.

Jireh took a 10 days trip to Cambodia on a bag pack trip. At the Cambodia Cultural Museum, is the infamous Killing Fields Museum.

On April 17, 1975, Phnom Penh fell under the control of the Khmer Rouge, the communist guerilla group led by Pol Pot. They forced all city residents into the countryside and to labor camps. During the three years, eight months, and 20 days of Pol Pot’s rule, Cambodia faced its darkest days, an estimated 2 million Cambodians or 30% of the country’s population died by starvation, torture or execution. Almost every Cambodian family has lost at least one relative during this most gruesome holocaust.

On January 7, 1979, Vietnamese invaded and freed the Cambodian people from Khmer Rouge’s reign of terror. 600,000 Cambodians fled to Thai border refugee camps. Fearful to return back to Cambodia, many Cambodians had no choice but to emigrate to the United States, France, or Australia.

Today, many people and organizations are educating the world about the Cambodian Killing Fields. Only through awareness will the world remember the lessons of the genocide, honor the memories of the 2 million killed, and promote peace and tolerance so as not to relive the same dark days.

Of Bears and Deers

The conversation around the table centred on bears, deers, raccoons, snakes, lizards, mice and iguana. An unusual topic for a farewell dinner.

ThreeTen hosted a farewell dinner party for Ps Heidi. She is leaving for Philippines before heading home. Her experience is so different from us. Her country - hush versus ours - hurried. God's creation as opposed to man made. Her stories of her hiking, camping and hunting awe us and our shopping and eating probably bored her.

It is amazing to know that Ps Heidi butchered deers and make houses. A missionary by training she had tried all sort of games (stuff you won't eat) in Philippines and Indonesia. And she loved rojak!

Dinner was splendid! Elise never fails to excite. Dinner started with crudite with walnut dip. Caviar and shrimp hors d'eouvre to wet our appetite.

A healthy seared togarashi scallop rocket salad is next. Scallop pan fried with black and white sesame and the salad served with a light sesame oil and soya sauce dressing.

Main course was a choice of coffee crusted rack of lamb or pan fried red snapper with ginger lime butter sauce. The lamb was tender and moist. Accompaniments were taro mash, pineapple peach chutney, five kinds of mushroom and asparagus. I loved the taro mash - a combination of butter with potatoes and yam are beautifully blended with truffle oil (man, this is expensive stuff).

Desert was coffee and tea with Spinelli Black, White & Brown cake, a chocolate mousse cake.

The evening concluded with Ernie presenting Ps Heidi her first wedding gift - a set of pearl jewellery.

The dinner would not be possible if not for the host - Ernie and Shelley who graciously offered their abode and transformed them to a delightful restaurant.

No. It is not Elza. It's her super mum. Yes. Ling Ling was enjoying her cuppa. The super mum runs a firm doing accounts and secretarial work for companies. Yes, a lot of companies.

It was a good time to catch up even though it was only for ten minutes. We meet almost every week but hardly sat down to talk. Maybe we should slow down and take time out to sit down with friends and chit chat.

Greetings for the New Year. The Hoos came with a long list of greetings. Pleasantly surprised with the children as they greeted in Chinese. The children had grown. Persis is as tall as Ning now and Jake had grown. Jake slept through out the din as we feasted on pineapple tarts, love letters, nuts, squid .........................................

The Tongs came next dressed to the nines. It was a blessing to have the Tongs live next door cos Janice is always at the door with her home cook meals. Strangely, she always seem to come at the right time when we needed them. Twenty five years back , Gordon, Andrew and I were young lads. Fresh, Gordon was signing on as an air force technician and Andrew, on his way to be a pilot and I - just out of army. Those were the days were we shared a loaf of bread cos we had no money for lunch or dinner. Life was so simple back then.

With Norman coming back end of the month, it will be a good time to catch up. Still the same group. A pilot, a missionary, an entrepreneur and me.

No postings for almost two weeks. It is been a busy three weeks and had been particularly busy helping someone sought out his problems. Hosting a group of church musicians this Saturday and follow by what is going to be a long long week as the company host a regional meeting from Monday to Friday and on Saturday helping out in a BBQ. And then it is to Bangkok for a business meeting. So it is gonna be a really exciting days ahead.

Looking for some time to chill out alone. Haven't been able to go to the beach early in the morning for walks with the regular washing from up above since December. Hoping to be able to get away one afternoon to read, ponder and pray ..........

A walk through the city.

Here I am in the city. This is the place I visit annually before Chinese New Year to get 'dried' stuff like scallops, sea cucumber, abalone ..... gifts for the mother in law.

We are here today to get our watches batteries fixed. The shop is at The Bencoolen - Win @ ground floor. This outlet is always packed cos his prices are reasonable.

Got our watches fixed at a really good price and took a stroll through Bugis Street. Stopped by a kiosk for a crunchy peanut cake and saw this lovely bread kiosk, it was so crowded.

Wow, a sex kiosk! No, there were two right smack in a young hip oasis. How the world has changed.

We got out of Bugis Street into Parco Bugis Junction to cool down and destress after the squeeze at Bugis Street. Got myself two DVDs - Elton John and Arista's 25 years concert. Arista changed the music industry bring in stars like W Houston, D Warwick, Kenny G and many more.

Refreshed, we walked over to Liang Seah Street and found a little Korean restaurant and decided to get a soup - Korean Chicken Ginseng soup. Ning and I loved soup and this brought back memories of our Korean trip twelve years ago. I hope I got the year right. We had this wonderful soup in Korean, the real stuff - lots of ginseng brewed with a young chick stuff with sticky rice. The version here is no where near the one we had but it was a refreshing soul food.

Liang Seah Road had so many eateries and should be rename as Hot Pot Street. It had lots of steam boat outlets, all serving buffet style. Turn right into Beach Road and there are two large outlets.

A Tale of Two Fishes

Speaking of the Chef. Here is a tale of two fishes.

What an experience. Two huge salmons about 5.5 kg each before me. The Chef showed me how to fillet the salmon. She did one side and I did the other. Needless to say, the fillets were messed up.

Yes. James, I did the baked salmon with Terry and Siew Yan's help. Someone asked for the recipe and I told Siew Yan that her head will roll if she let out the secret cos she the one who knows it.

Ok, for those who wants to try, it is really easy.
. Fresh herbs - parlsey, basil and rosemary
. Extra virgin olive oil
. Sliced pear
. Coarse minced garlic
. Salt and pepper

Rub the salmon with salt and pepper. Break the herbs up and mix with the oil and garlic. Stuff them together with the pear into the gullet and seal it with strings. Wrap it up with foil. (Needs Terry here to make a large foil - two layers to keep the juices in).

Bake for 30 minutes.

Suvarnabhumi Airport

D2. The holding area before my flight back to Singapore at Thailand new airport. Suvarnabhumi Airport. The place is huge. The transit centre, immigration and shopping area are designed like malls. The holding area is more of a warehouse look. Bare concrete with steel structures.

Looks like the airport was launched in a rush and a lot of things are in need of attention. Broken tiles, dirty windows etc..........

It is spacious compared to the old airport at Don Muang. No time to check out the shopping and I hope it makes shopping worthwhile. At Don Muang airport, forget about shopping in the airport, prices are higher than what's available outside the airport.

This airport sits on a low lying area infested with snakes. Definitely not a place for our dear chef.

No. I'm not picking up a fight. This is amusing. But on the other hand, not funny though as it is quite a serious issue between parents and their teenage children.

Somehow, somewhere things got off tangent and very different perspectives were formed.

I heard it's a universal problem. It is inclusive whether you are a parent or a teenager. If you are not part of this issue, probably you are not of our species or from another solar system.

Well, the world will continue to spin for another couple of years. And when you young guys start a family, you will appreciate the true extend of this poser.

Don't plray plray.

This Ah Niu Ge plays the Chinese flute like a pro. The Winter Sonata on Chinese Flute. Yeah man, Ah Niu Ge does it. On the stairs, in the lift. Standing or sitting. Quick and slow tempo. And he even let me record it on my Sony Ericsson K500i.

He is good. I was at the fourth level and Ps Heidi asked who is playing the flute and I told her that it was the CD.

I'm not chui niu ok.

Quiche Come and Eat

This was taken at Elsie's kitchen, her workplace. Remember I told you that we were caught in a jam and not been able to drop by RSAF Paya Leba airbasefor the air show? We went to visit Elsie instead of trying to find a parking lot.

Quiches!. Brought back lots of memory. My love affair with them started in in Australia when I was at Melbourne for a conference about six years back. The hotel served an assortment of freshly baked quiches. There were salmon, ham, vegetarian .......... With the conference over a few days, like an eagle, I waited for tea to be served and go for the quiches the minute the tray was laid down.

It was a start of a journey of my love affair with quiches as I soaked in the aroma of the quiches browning in the heat.

Concidentally, when Kimberly and I went back home, Janice had brought some freshly baked quiches over for the boys. The message "Aunty Janice brought over some quiches and we finished it. It was yummy". That's it, nothing for me.

Was having a good time with him at Ris Grandeur Condo, John and Rebecca's new abode. Wonderful pool with warm water spa pool.

It was a great morning at Pasir Park. Carnival with lots of games and fun. Hot dogs, muffins, jellies, kacang puteh, putting, plonk, water guns, darts, shoots ....... The children are having a whale of their life.

What Did You See?

What do you mean by "what did you see?" Yeah, it is just an escalator, what is there to see?

Well, you see - the escalator is one of the greatest invention of man. Or at least the product of year in Singapore. "You mean that making it easier to move from floor to floor is a great invention". No, I mean the romancing on the escalator. Didn't you notice that when a couple steps on the escalator, somehow the magic starts - first it was both on the same step, then the lady will move one step up and face the guy. They wrap their arms around each other and kiss. It is magical and spontaneous. No pre planning. Just magic.

It is a phenomenal. Makes a great research project for psychologists working for his PHD. The Singapore government would be interested in the findings. Singapore will be a fine green city with lots of escalators - Romancing Singapore and Baby Bonus project managers will certainly invest in them.

There will be escalators everywhere. In the malls, HDB blocks, hawker centres.... Horizontal, vertical types, circular and one that just goes round and round.

Under Fire

When I was young, we used to make toy guns out of planks. A rubber band fixed at the tip of the barrel and on the other end, we nailed in a wooden peg. The rubber is then stretched and held down by the peg and this acted as the mechanism to propel our ammunition. For bullets, we used unripe green ‘buay cherry’ fruits. These fruits were in abundance where we lived and when ripen, they are red and tender with a grainy sweet taste.

The peg holds down the stem and the rubber band is extended over the fruit. Releasing the peg will propel the fruit forwards.

We had so much fun back then. Today, you hardly find these trees. I found this at Kaki Bukit. Courtesy of Elsie.

Tiong Bahru Chicken Rice, Tiong Bahru Fried Kway Teow, Tiong Bahru Pau, Tiong Bahru Teochew Kueh, Tiong Bahru, Tiong Bahru.

This is the new Tiong Bahru Market. The old is gone and the new has come. What about the food? Somehow, it doesn't tastes the same anymore.

And it looks like there are a lot more outlets. If you drive into the carpark, be careful, there is a kerb just right before the entrance at the top level and somehow the designer got it all wrong and the cars have to drive over the kerb.

Have you guys been to Daiso?. The Amazing Store. Always $2.

In Japan, 100 Yen stores are popular and Daiso is one of them. In Singapore for about a year, Daiso sells a wide range of things - stationary, food, containers, tools, consumer goods, papers, picture frames, paper wares, toilet stuffs, toys, pails, pans, cassette, pottery, cultery........... the list goes on and they are nice and cute Japanese design and all items are $2 a piece.

Just got myself a plunger for the blocked basin, a prepacked miso soup (5 servings), a pack of furikake - a Japanese condiments for rice, a cute cartoon cover for my guitar amp and a sponge to wash my Mazda. All for ten bucks including GST. A great place if you are looking for presents for friends (if you got lots of them).

Don't be cynical, the goods are good quality stuff. The maiden store is at IMM, 3rd or 4th floor and is huge. They will be opening a store at Plaza Singapura soon. Check it out.

A caution here. The stuff are cheap at $2 at item, but you can't help picking things as you browse through the store and before you know, you realise you are drying up your wallet at the check out counter.

Why the restriction? Is it that the fluid will stain the seats and carpets, is it to avoid people using them as projectiles? Is it ...........?

Stupid Traffic Jam

"Ram, want to go to RSAF open house?". "No". There goes my kaki for the RSAF outing.

One week later ......

"Gilbert, are you going to RSAF open house?" asked Janice. "Can you bring Kim along?".

Wow, I found a partner to tag along.

Packed two digital SLRs, 18 - 70 mm zoom lens, 100 - 400 APO lens and 50 mm.

And goes Kim and Uncle Gilbert. 10:30 am, met at the lift lobby, last minutes instructions from Kim's mum. Got into the car and headed for PIE towards Jurong.

One hour later (still) in the jam, we sat in the car watching the fighters and apaches flew by. The air display was over and we finally got to the entrance of the air base. "Sorry Sir, carpark is full, please turn left and use the public carparks".

Ok, we drove along and every nook and corner were taken up. We gave up - one and half hour in the traffic jam. Don't they anticipate the crowds?

We decided to go to Elsie's kitchen. At least Kim will get to see something. Elsie is a darling. Gave a bowl of freshly brewed bean soup and a large ham and cheese sandwhich for Kim. All pictures are in Kim's cute digital camera.

The Crocs And My K510i

The Crocs are in town. Did you see the fat old big belly man in orange Crocs? And the family of four all in Crocs?

I know of an Elsie who got a pair of Crocs. She used in for your work in the kitchen. Come Sister, bring your Crocs out for a ride. They are cool, colorful and comfortable.

A new culture is born.
